A few days ago I read a piece of news that particularly struck me: the Horeca sector - in beverage alone - has a turnover more than double that of Serie A football and Alitalia. Reflection is therefore in order: if food carries more weight than beverage in the catering industry, can we imagine what economic value our category has in our country’s balance sheet? This is the great challenge that awaits us after a satisfying year in numbers, but threatened by the inflationary spiral. We have to work together to make people understand that the entire supply chain is an important segment not only for sociality, but above all for the economic well-being it generates. And in a changing world we must be actors, not spectators, and not be afraid to face the new challenges by carving out a leading role for ourselves. A concept that we addressed a few weeks ago in Vienna during the Convention that brought together Members and Suppliers in an extremely fruitful discussion that mapped out the future of our Cooperative (see page 10). And when we talk about protagonists, we cannot fail to mention one of our historical CIC members, Santanna di San Quirino (Pn), which recently celebrated 50 years in business through responsibility and innovation (see page 6). But the challenges do not stop there: the article on page 14 shows the great results of ‘Made in Italy’ abroad, outlining new opportunities to be seized with our branded products outside Italy. In short, there is so much to do. We are reminded of this by the protagonist of our cover story (p. 20), chef Simone Strinati , who, speaking to young people, reminds them that this profession is made up of hard work and continuous study and that without passion nothing can work! If in 2019 the Horeca market was worth 85 billion euros with 320,000 consumption points (Tradelab monitoring data), in 2020 the value fell to 54 billion euros (-37% compared to 2019). We all know the reasons for this ‘setback’ and there’s no need to repeat them. The important data from which I want to start my reflections are the 65 billion euros that the industry ‘gained’ in 2021 (+20% compared to 2020) and the turnover estimates for 2022 that predict a closing with a bang: 90 billion euros, although it is important to point out that these numbers are also linked to high inflation rates. In short, the drivers underlying the increase of eating out continue to be decisive and consumption has quickly returned to growth. All the actors in the supply chain, including CIC members, have shown resilience and great capacity to adapt in recent years, turning difficult times into an opportunity to re-examine their business models. In 2023, it will be necessary to continue to understand short-term trends and those that will lead to a change in consumer behaviour and the conduct of intermediaries and consumer outlets.
