Among the egg pastas, on the other hand, we find agnolotti, filled with meat , very similar to ravioli but their shape is half-moon. ‘Umbricelli are our workhorse,’ confirms Paolo Trippini, ‘it is the most popular dish in my restaurant; I propose them with truf fle, pecorino cheese and Sulla honey , a very fragrant honey that is perfect in this type of preparation. BETWEEN TRUFFLES AND PULSES As in some areas of Piedmont, the truf fle is also a widespread product in Umbria. Unlike in the Savoy region, where the white truf fle prevails, here the prized black Umbrian truf fle , also known as the Norcia and Spoleto truf fle, dominates. It can also be found in the woods of neighbouring municipalities, especially in the territories bordering the course of the River Nera and in the province of Perugia, mainly on Mount Subasio, whose soils are calcareous and clayey, where trees such as oak, holm-oak, beech and chestnut grow predominantly.
